vital substances: Walnuts offer the highest content of omega 3 fatty acids (linoleic acids) of all types of nuts and are a good source of minerals and vitamins. They particularly contain vitamin E, A, the B vitamins, zinc, potassium, magnesium, iron and calcium.^1,2 It is well known that wild nuts in particular contain the full power of nature and can therefore contribute even more to optimally supplying the body with vital substances. The vital substances contained in walnuts have been shown to lower blood cholesterol levels, stabilize blood sugar levels, support the blood vessels, reduce the risk of stomach and prostate cancer and heart attacks, inhibit inflammatory reactions, strengthen the heart muscle and support the liver. Furthermore, walnuts are said to have a positive effect on type 2 diabetes and protect the body, especially in stress-related situations.¹

Walnuts are therefore ideally suited for a balanced, healthy diet and should not be missing from the daily menu. Walnuts contain an extremely high antioxidant capacity of 13541 µmol TE (ORAC value = Oxygen Radical Absorption Capacit). By consuming foods rich in antioxidants, the defense mechanism in the body can be strengthened and an overproduction of free radicals can be balanced out. An ORAC daily requirement between 5000 and 7000 is recommended.⁴

Description: Our organic broken walnuts come from real wild trees. The quarry was checked and sorted several times. It is ideal for grinding or as an ingredient for various pastries, nut bars, etc. The colors vary between a delicate and a strong shade of brown. The pieces are different sizes. The taste is the same as our whole walnuts.

Origin: We source our organic walnuts exclusively from Uzbekistan. This is the only way we can be sure that the quality meets our high standards. The walnuts grow on wild trees around Samarkand. The area is largely organic and certified. The approximately 1,000 farmers who farm the area only at harvest time belong to one of three large Fairtrade groups, Dustkul Bogi, Turkiston Gulba or Turob Bobo. Thanks to the cooperation with Fairtrade, the farmers can offer their families a secure income and their children a new perspective.

Drying: After careful harvesting, the walnuts are cracked open. This is where our broken walnuts come from. The walnut pieces are then gently dried with the help of the sun. The solar drying method used is very environmentally friendly and gentle on the product.

Purity: Arriving in Austria, the broken walnuts are pressure treated and laser cleaned as standard. When it comes to printing, the interaction of pressure and time ensures absolute freedom from pests. During the subsequent multiple cleaning in the laser cleaning system, the walnuts are checked individually to rule out any foreign contamination.
