Our organic Fairtrade apricot kernels are characterized by a very fruity, but at the same time nutty character. They are very popular as an alternative to almonds and can of course be enjoyed raw
They resemble almonds in appearance, color, shape and consistency, but are crunchier and more aromatic because they are surrounded by a fruit. Only very sweet apricots are used for the sweet apricot kernels because this guarantees that the amygdalin content is low and the kernels can be eaten without hesitation.1
Apricot kernels are a good source of minerals and vitamins. Apricot kernels, especially pre-germinated ones, are a good source of minerals and vitamins, especially B vitamins, magnesium, phosphorus and iron.2 They are therefore ideally suited for a balanced, healthy diet.
Our fine defatted apricot kernel flour only contains around 10% fat, while normal nut flour has a fat content of over 50%.
The apricot kernel flour is made from whole apricot kernels and therefore the taste is strong and intense, but not greasy. The color of the flour is light to dark brown, as the apricot kernel skins will be stained with it. The baking properties are similar to those of almond flour.
We source our organic Fairtrade apricot kernels, which we use for the production of apricot kernel flour, exclusively from Uzbekistan. Only from there can we be sure that the quality will meet our high standards.
The apricots ripen on trees around Samarkand. The area is largely organic and FAIRTRADE certified. The approximately 1000 farmers who work the area belong to one of three large Fairtrade groups, Dustkul Bogi, Turkiston Gulba or Turob Bobo. Thanks to the cooperation with Fairtrade, the farmers can offer their families a secure income and their children a new perspective.
After the careful harvest, the apricots are washed, halved and pitted. The peel of the kernel is cracked open and the actual apricot kernel is gently dried with the help of the sun. The drying process used is a very environmentally friendly solar drying method that is extremely gentle on the product.
Once in Austria, the apricot kernels are pressure treated and laser cleaned. With pressure removal, the interaction of pressure and time ensures absolute freedom from pests. During the subsequent multiple cleaning in the laser cleaning system, the almonds are checked individually to rule out any foreign contamination.
Only then are the apricot kernels chopped up and ground. In the last step, the fat content in the apricot kernel flour is reduced with the help of pressure.
