Our organic cocoa pieces are a slightly bitter taste experience for every cocoa lover. The taste is very pleasant due to the smaller pieces and is slightly softer than that of the whole beans. We recommend the cocoa pieces especially if you only want to add small flavor accents. The pieces are crisp and have a firm structure. Did you know: The white deposits on the skin of the beans have nothing to do with mold, they are natural residues from the soil. They reflect the respective soil properties of the cultivated area. Cocoa beans are the seeds of the cocoa pods, which are fermented after the harvest, whereby they lose their bitter substances. They are then gently dried, creating the polyphenols that determine the taste and the brown color. Our raw, peeled (peeled) cocoa nibs are unroasted and therefore of raw food quality. Before they are chopped, the beans are sorted and handpicked very carefully. The harvest, drying and sorting are carried out under high hygiene standards. The Aztecs and Mayans considered the cocoa bean to be a much valued food and means of payment and was also referred to as "brown gold". Cocoa was considered sacred and was used as an offering to the god "feathered serpent". In the 17th century the cocoa bean became a luxury item all over Europe!
