Small fine cocoa pieces, called nibs, made from the Peruvian fine cocoa variety Criollo refined with fine Panela or also called Rapadura.

Our organic cocoa pieces are a slightly bitter taste experience for every cocoa lover. The taste is very pleasant due to the smaller pieces and is a bit softer than that of the whole beans. We particularly recommend the cocoa nibs if only small taste accents are to be set. The pieces are crisp and have a firm structure. Did you know: The white deposits on the skin of the beans have nothing to do with mold, they are natural residues from the soil. They reflect the respective soil conditions of the cultivated area. Cocoa beans are the seeds of the cocoa fruit, which are fermented after harvesting, losing their bitterness. They are then gently dried, forming the polyphenols that determine the taste and the brown color. Our raw, peeled (skinned) cacao nibs are unroasted and therefore of raw food quality. Before they are crushed, the beans are very carefully sorted and handpicked several times. The harvest, drying and sorting takes place under high hygiene standards and with great care. For the Aztecs and Mayas, the cocoa bean was a highly valued means of food and currency and was also referred to as "brown gold". Cacao was considered sacred and was used as an offering to the god "plumed serpent". In the 17th century, the cocoa bean developed into a luxury item throughout Europe
