On the one hand, vital substances tend to become less during the individual processing steps, but also, and this is a great advantage with dried products, that they increase because the water is extracted from the product. Vital substances like it especially when the processing steps are gentle and as close to nature as possible. Then the losses are limited.

Description:
Our organic aubergines consist of approx. 10x5 cm large aubergine pieces, which are pleasantly soft and ideal for further processing. Their taste is very intensely aromatic and they smell pleasantly of aubergines. This is only possible because they were dried very gently. You will be amazed by the quality.

Origin and manufacture:
We source our organic aubergine pieces exclusively from Uzbekistan/ Samarkand. The fields and gardens are largely certified organic and are managed by the farmers who live there. The farmers belong to a large community, which is made up of 3 groups, Dustkul Bogi, Turkestan Gulba und Turob Baba. They include around 1,000 individual farmers, along with their families. Thanks to the cooperation with Fairtrade, the farmers can offer their families a secure income and their children a new perspective.

After harvesting, the aubergines are washed, cut into pieces and then gently dried with the help of the sun. The drying process used is a very environmentally friendly solar drying method that is extremely gentle on the product.
